Neither apple cider vinegar nor chia seeds is less inflammatory than the other: both score a 2. They get compared because both are sold as the thing to take before a meal, and both do a good deal less than the internet promises.

The vinegar works through acid, and a spoonful in water flattens the rise in blood sugar that bread, rice or pasta brings. Chia works through bulk: a third of the seed is fibre that sets into a gel and slows the whole meal down, and it brings plant omega-3 and calcium along with it. One is a seasoning and the other is food, so if you only add one thing this week, add the chia. Stir a tablespoon into yoghurt, and always into something wet, because dry seeds swell and can lodge in the throat.

On the AIP diet

Allowed

Apple Cider Vinegar

Apple cider vinegar is allowed on the Autoimmune Protocol in every phase, elimination included. It is not a grain, a legume, a nut, a seed, a nightshade or dairy, and fermenting leaves little behind but acid. It matters here because AIP takes away most of your seasonings, and vinegar gives food back its sharpness. Read the label: plain is fine, but flavoured bottles often hide sugar.

Not allowed

Chia Seeds

Chia seeds are not allowed on the Autoimmune Protocol. The elimination phase takes out every nut and seed. That stings if you bake, because chia is the standard stand-in for eggs outside the protocol, and on AIP the eggs are gone too. The job falls to gelatin, mashed banana or pureed pumpkin instead. Seeds are not a long wait: they come back early in the reintroduction, and chia is a reasonable one to test first.

What each one brings

Apple Cider Vinegar

  • Flattens the rise in blood sugar after bread, rice or pasta
  • Adds sharpness to food with no sugar, no salt and no calories
  • Plain cider vinegar is allowed on the AIP diet from day one
  • The cloudy sort brings live bacteria, though the acid does the real work

Chia Seeds

  • The richest plant source of omega-3 by weight, though in a form the body only partly converts
  • A third of the seed is fibre, and most of it sets into a gel that slows a meal down
  • Whole seeds work: unlike flaxseed, chia does not need grinding
  • Two tablespoons carry about as much calcium as half a glass of milk

Watch out for

Apple Cider Vinegar

  • Undiluted it wears at tooth enamel, so mix it into water
  • It can burn the throat and make reflux worse
  • Gummies and ready-made drinks often add sugar and hold little acid
  • It is a seasoning, not a treatment, and more is not better

Chia Seeds

  • The omega-3 is the plant form, and little of it becomes what oily fish gives
  • Swallowed dry it swells and can lodge in the throat, so put it in liquid first
  • A big jump in fibre brings bloating and cramps for a week or two
  • Around 140 calories in two tablespoons, easy to miss by the spoonful
