Potato vs White Bread: Which Is Less Inflammatory?

Potato

White Bread
Potato is less inflammatory than white bread, and it is not close: potato sits in the middle of the inflammation scale and white bread near the top. Both are the cheap filler in a meal: a jacket potato at lunch does the same job as two slices of toast.
White bread is wheat with the bran and the germ milled off, and the fibre leaves with them. Nothing is left to hold the starch back, so it reaches your blood as sugar within minutes, and those fast rises are one of the ways ordinary food keeps inflammation going. Several slices a day also make bread a large share of the salt most people eat.
Nothing has been milled out of a potato. Keep the skin on and you keep most of its fibre, and the yellow and purple varieties carry pigments that work against the cell damage behind inflammation. Potato still misses the low band, for two reasons. A plain boiled potato lifts blood sugar about as fast as the bread does. Most potatoes also reach the table fried, which adds refined oil and salt to the plate. Swap your two slices of lunchtime toast for a jacket potato, skin included.

On the AIP diet
Potato
Potato is not allowed on the Autoimmune Protocol. It is a nightshade, and the elimination phase takes out every nightshade because of the glycoalkaloids in them. Sweet potato is a different plant and stays, which is why it becomes the main starchy food on an AIP plate. Nightshades are usually reintroduced late, and green or sprouting potatoes stay out even then.
White Bread
White bread is not allowed during the elimination phase of the Autoimmune Protocol, which takes out every grain. Wheat is the clearest case, because gluten is one of the proteins the diet was built to remove. It is also among the last foods people test when adding things back, and many never bring it back. Cassava flatbreads and plantain crackers are the compliant way to keep something to hold a topping.
What each one brings
Potato
- A whole vegetable, and most of the fibre sits in the skin you can keep on
- One medium potato carries more potassium than a banana
- Yellow and purple flesh contains pigments that work against cell damage
- Cooked a day ahead and eaten cold, part of its starch feeds your gut bacteria
White Bread
- Low in fibre, so it is gentle on a gut that is irritated or recovering
- Enriched flour carries added iron and folic acid, which matter in pregnancy
- Freezing it, toasting it, or both lowers the blood sugar rise it causes
- Cheap, keeps for days and carries protein and vegetables well
Watch out for
Potato
- A plain boiled potato lifts blood sugar about as fast as white bread
- Most potatoes are eaten fried, which adds refined oil and salt
- It is a nightshade, so it comes out during the AIP elimination phase
- Green patches and sprouts hold more glycoalkaloids and are worth cutting away
White Bread
- Milling takes off the bran and the germ, and the fibre goes with them
- With no fibre to slow it, the starch turns into sugar within minutes
- Several slices a day make it a large share of the salt many people eat
- Not an option in coeliac disease, and every grain is out in AIP elimination
